Crispy Fish Bites

1 1/2 cups cake flour,
1 teaspoon each paprika and pink Himalayan salt,
1/2 teaspoon each baking soda,
½ teaspoon black pepper

Combine all ingredients in a bowl; transfer half to a plate. Whisk 1/4 cup plain Pequea Valley Farm yogurt and 1/3 cup seltzer into the remaining flour mixture.

Dip 1 pound of finger-tip size pieces of firm white fish in the batter, then roll in the dry flour mixture.

Working in batches, deep-fry in 350 degrees F avocado or coconut oil until crisp and golden, 3-4 minutes.

Season with salt and serve with tartar sauce.
